The complexity of your Graves is fully revealed between 16°C and 17°C (60 to 63 °F). Serving your bottle too cold or too warm would limit the expression of its aromas. We advise using a large glass rather than a small glass.
50°F - 59°F
The Silence of the Lambs – Jonathan Demme – 1991
Made from a blend of 50% Merlot, 42% Cabernet Sauvignon and 8% Cabernet Franc, this wine has been aged in 1/3 new casks for eighteen months. Initially shunned by the critics at its release, the 2004 vintage gained popularity over the years thanks to its great aging potential, full body and concentration.
This is the only appellation whose name is derived from the stones, which compose the terroir: the "Graves". This type of soil is usually poor, naturally well drained, and mixes pebbles with old sand from the Atlantic Ocean.
